GOK #39:  Ari Unda
Ari unda is the traditional snack of Kerala. This is easy to prepare, and is made with roasted rice, freshly grated coconut and dark brown jaggery and the snack is just yummy.  Try this!

Ingredients:
Rice : 1/2 kg
Jaggery : 750 gm
Grated Coconut : 2-1/2 cup 
Cardamom : 10 pods

Method:
Wash the rice well. You can use Palakkadan Matta rice/ Red Kuttari / Par Boiled Rice.

Strain the water well.

In a thick bottomed Aluminium kadai, roast the rice on medium flame. Keep on stirring. Roast it till the rice grains breaks.

Transfer this to a wide plate and let it cool.

Add the cardamom powder to it.

Add the powdered jaggery and grated coconut to the rice powder and coarsely grind it together for just a few seconds in the mixer-grinder.

Grind till everything is well mixed.

Make lemon-sized balls with this mixture and serve it immediately or keep it in air tight dry containers.


Tips:
The main secret for soft ari undas is the right level of roasting the rice. The rice has to be roasted very well until the rice breaks and pops up. It cracks easily in your mouth.

It will take at least one day time for the ari unda to get harder.
