GOK #36: Undan Pori - Kerala Thattukada Special
Undan pori is a popular snack among Kerala tea shops. It is crispy and crunchy and at the same time soft and spongy inside. It resembles very much to the unni appam yet it is different in its taste and texture.  Try this simple recipe!


INGREDIENTS:
1-1/3 cup wheat flour
1/3 cup rice flour
baking soda, a pinch
3/4 cup jaggery
3 small bananas, mashed (use Palayamkodan variety if available)
1/3 tsp cardamom powder
1 tbs ghee
1/3 cup coconut chunks
salt, as needed
oil to fry

METHOD:
Melt jaggery by boiling with little bit of water to a thick syrup and allow to cool.

Heat ghee in a pan and roast coconut pieces till golden brown.

Mix the mashed bananas with jaggery syrup.

In another bowl mix all the dry ingredients and add banana mixture and fried coconuts to make a smooth dough.

Make round balls out of this dough and deep fry till golden brown.

Serve with hot tea.
