GOK #19: Unakkalari Paayasam
Unakkalari is Raw Rice (pachari) with bran. A typical Kerala style payasam.

Unakkalari (brown rice) 200 gm
Jaggery 500 gm
Coconut 2
Coconut first milk 1 cup
Second coconut milk 1 litre
Third milk 3 litre
Ghee 50 gm
Cut coconut 1 cup
Dry ginger powder 1/2 teaspoon
Powdered Jeeragam 1/2 teaspoon
Cardamom powdered 1/2 teaspoon

In a thick bottomed vessel, bring the third coconut milk to a boil and add the coarsely ground and cleaned brown rice.

When the rice is cooked three fourth, add filtered jaggery syrup.

When it starts to thicken, add the second coconut milk.

When it starts thickening further, add all powdered ingredients and switch off the stove.

Pour the first milk and ghee.

Fry cut coconuts in ghee and add to it.
