GOK #1: Malabar Chicken Biriyani
MALABAR CHICKEN BIRIYANI

FOR CHICKEN MARINATION
Chicken - 1kg
Chilly pwd - 3/4 tsp
Turmeric pwd - 1/2 tsp
Salt - to taste
Marinate the chicken with the above ingredients for 1 hr & deep fry in oil till it turns light brown in colour.Keep it aside.

 
FOR BIRIYANI MASALA
Onion - 7 medium sliced
Ginger - 2 inch piece
Garlic - 12 cloves
Green chillies - 15(or as per ur taste)
Tomato - 2 big sliced
Yoghurt - 1/2 cup 
Lemon juice - 3 tbsp
Coriander leaves - 1/2 cup
Garam masala - 1 1/2 tsp
Cinnamon -2 pieces
Cardamom - 2
Cloves - 3
Oil 
Salt

1. Take a pan,heat oil,put cinnamon,cardamom,cloves,add onion saute till it turns
light brown in colour.
2. Grind garlic,green chillies & ginger together.
3.Add this grinded mixture to onion & saute till its raw smell disappears.
4. Add tomatoes & saute till it turns soft.Add yoghurt,lemon juice,garam masala pwd,salt,fried chicken & cook for few minutes till chicken gets cooked.Add coriander leaves. Remove from fire & keep it aside.

FOR GHEE RICE
Ghee rice - 3 glass
Onion - 1 small
Cinnamon -2 pieces
Cardamom - 3 
Cloves - 3
Bay leaf - 1
Water - 5 glass

1. Boil water.
2. Wash & clean the ghee rice.
3. Take a pan,heat oil, ghee,add cloves, cinnamon,cardamon,onion & saute for few minutes
4. Add cleaned rice & saute till it turns opaque,add boiling water,salt & cook it in low fire till done.

FOR DUM
1.Take out 3/4 part of rice from pan.Put 1/2 tsp garam masala,pour 1 tsp lemon juice & few coriander leaves on 1/4 part of ghee rice.
2 .Spread 1/2 part of biriyani masala.Then repeat the same process(ie:-1/4 part of ghee rice third layer,biriyani masala (4 th layer) & remaining 1/4 part of ghee rice as 5th layer).Keep in low fire.

FOR GARNISHING
1.Fry 1 onion sliced,1/4 cup cashewnuts & 1/4 cup raisins in ghee till it turns golden brown.
Serve biriyani & garnish
